Richard Moore hosted an end-of-year dinner for Lionel Birnie, Orla Chennaoui and chef Hayden Groves, who rode the route of all three grand tours and wrote a cookbook called Back In The Saddle which features a recipe inspired by each stage.

Knowing Lionel’s passion for cassoulet, the peasant dish of beans, duck, pork and Toulouse sausage that hails from the south-west of France, a challenge was set.

Richard, Lionel and Orla would each prepare a course for the feast, with Lionel taking on the task of preparing the cassoulet.

And as they tucked in, they also chewed over some of the highlights of the 2017 cycling season.
